Separate the following ingredients before making the soup:
The vegetables and spices:
2 sweet potatoes (medium sized)
8 carrots (large ones)
1 onion
6 cups of fresh vegetable stock
Fresh chopped cilantro (or coriander)
(obs.: a handful is enough)
Other ingredients:
2 tablespoons of dry wine (the cooking kind)
Pinch of salt and pepper
1 tablespoon of olive oil
4 tablespoons crème fraiche ( which is a special kind of sour cream)
obs.: If you can’t find crème fraiche then you can substitute it with low fat yogurt.
After you have all of these ingredients out on the counter you can follow these simple steps:
1st: Slice the onion. Mash the 2 sweet potatoes and cut the carrots roughly.
2nd: Place the sliced onion in a large pan together with the olive oil and heat it for about 5 minutes. After this time it should already have a brown or golden coloring.
3rd: Keep stirring while adding the carrots and the potatoes that you mashed. Stir while heating for about another 5 minutes.
4th: Add the vegetable stock and by now the soup will have come to a boil. When this happens, reduce the heat and let it simmer for about 25 to 30 minutes.
By this time the carrots will be tender and the amount of liquid will be less in the pan. Turn off the heat and let it cool for a little.
5th: Now it’s time to blend the soup. You can also use a food processor if you have one. Blend the soup for about 2 minutes. If you want it to be smoother you can blend it for more time.
If you want it to be chunkier you can blend it for only 1 minute.
6th: Put the soup back into the pan and heat it again. Now it’s time to season with salt and pepper. To spice up the presentation add a little fresh cilantro and a spoonful of crème fraiche in each soup bowl.

Yeah, I can see me now, after slicing and dicing I will have to search through the ingredients to find that piece of finger that I sliced off, not to mention cleaning up all the blood.
Perhaps if I ask the wife nicely she’ll whip this up for me. It sounds really nice.

Blessings right back at you Eren. Just so you know, I used to run a delicatessen many years ago, and I did actually slice the tip of my little finger off. Never did find that little sucker. Reckon that’s one way to lose a little weight.

That is awful- I had a friend of mine who also cut off the tip of her finger. I kept telling her to pay attention before using those big knives. It was awful so I hear ya. I’m one for always spilling coffee on myself.
I’m also on the weight loss battle. It’s just a lot of hard work but I don’t want to be cutting of pieces of fingers though LOL!

Eren, don’t go stressing over losing weight when it isn’t necessary. Just eat healthy, exercise to stay fit and I reckon you’ll be right.

I have always enjoyed a good soup with my meal. My mother has made similar soup with carrot and potato. What my mother likes to add in too is celery.

@ Sire - Thanks but I do really need to lose more weight. It’s a battle but I believe I can get there – slowly but surely.
@BK - That’s a great suggestion. Celery make a huge difference in the taste of soup. My mom does this too! I think I’ll try it.
